Our 5th Year with Honduran Coffee Alliance

We are super excited to feature an HCA coffee for the 5th year in a row and have the Edwin Nicolas’ coffee with us again! This is the same coffee we showcased last year — the Honduras Princess Diana! We love that this coffee has become an option that our customers ask for by name.

The Coffee

This is a super tasty, washed processed coffee is a great fall offering with a similar flavor to the versions we have had years prior. It’s a mix of Catuaí, Icatú, Lempira, Marogojipe and Parainema varities.

How does it taste

The coffee has a smoothsweet flavor with honey, cinnamon, lemon citrus flavors. When you grind this coffee, you’ll be greeted with buttery, caramel, bakers chocolate and floral hints.  It’ll finish with a creamy, semi-sweet, chocolate flavors.  While this coffee is bright, it is by no means sharp and is easy to drink.

Farm / Producer Story:

Edwin grew up in the same coffee mountains where he now has his farm and is a 3rd generation coffee farmer. He went to university on the other side of the country to study agronomy and there met his wife, Maria Emilia.

After university, they moved back to manage the coffee farm that he had inherited and bought a farm under Maria’s name on the other side of the road. Their farms are surrounded by family – four of Edwin’s siblings and many cousins have neighboring farms. The farm was thriving for many years until the Coffee Rust Disease destroyed their entire farm in 2008.

The following years were extremely difficult as they had to take out loans to replant coffee and renovate the farm and wait until the trees were ready to harvest again. They have had other climate challenges and low prices but have persevered and now have a great coffee farm again. Together, they now manage three farms - Finca El Esfuerzo, Finca Princesa Diana, Finca El Potrero - for a total of 24.5 hectares.

2023 Update

Edwin attended a training on different processing methods to produce quality coffee in 2015 and since has been experimenting with different processing methods and excited about producing great microlots. Edwin and María credit the CAFESA cooperative that they were founding members of for helping them to thrive again as coffee farmers and for learning to use organic fertilizers.

They now have three kids (21, 19, and 9 years old) with their oldest son soon to finish University and come back home with a degree in agronomy. They have been replanting portions of their farms with a new varietal - ANACAFE14 - that has better disease resistance. They also have taken on projects of reforestation to protect the sources of water.
